BBQ Slaw Tacos

Trying to figure out what to do with the leftover barbecue want something different. Same old barbecue  getting you down try this.

After the fourth we had lots of barbecue left over. For some reason I can’t for the life of me think of why, I agreed to let my honey barbecue up half of the deep freezer for the first time when I usually say, “No,no one wants to eat barbecue for a whole week straight or more”and he says, “I do”!

So out of my stubbornness to not cook anything until all of the barbecue was gone came this little number yeah, happy dance!

What you Need:

1-Leftover BBQ Chicken (1thigh for 2 tacos)

2- two corn tortilla shells

3- coleslaw (*see simple slaw recipe)

4-oil for frying & papertowels


First-unless you are buying your coleslaw and I recommend publix brand (Sweet); you will need to make your own before you do anything else *.

Second-Cut up the meat from your chicken and place in microwave for 30 seconds. Leave in microwave to keep warm while moving to step three.


Three-Lightly fry each side of each tortilla, then place on napkin to remove excess oil from each side and fold over.



Four-Fill each taco with meat and coleslaw.
